How to make Chicken and Cabbage Salad
Place the chicken in a pan and cover with enough water.
Bring to a boil, reduce heat and simmer gently for 10 minutes.
Remove from the heat and let it sit, covered, for a further 10 minutes.
Drain, slice and tear slices into strips.
Coat the chicken and cabbage with the dressing.
Add carrot, onion, tomato, mint and some of the peanuts. Toss well.
Transfer to a serving plate.
Garnish with remaining peanuts and a little more dressing.
